You could do just about any type that will melt.  Jalapeno pepper, pepper jack, swiss, cheddar, american, mozzarella.  They all sound good to me.</description>

Anything reasonably soft -- the appeal of the bleu cheese is that it oozes a little. Pepper-jack is one I have used, but plain monterrey jack is good; ditto for mozzarella which sounds like it would be great with the portabella and red pepper.  I&#039;d stay away from goat cheese if she doesn&#039;t like the bleu -- it&#039;s texture and sharpness would likely be an equal turn-off.

I live to put a combination of Cheddar, Monterey Jack and Marble (if I have any in the house).  Also, put some shredded Parmesan in the middle of the tortilla shell.  This gives it some saltiness without having to actually use salt.</description>
